Ternasco of Aragon. Filetes con Sesos y Setas. Aragon. Spain.

Ingredientes:

Costillas de Ternasco / sesos / setas / Mirepoix / reducción de vino Blanco / sal / pimienta / aceite.

Preparacion

Deshuesamos las costillas del Ternasco y las bridamos.

Los huesos los asamos. Les añadimos la Mirepoix, la reducción de vino y el caldo de carne, de lo cual obtendremos la salsa.

Los sesos los herbimos aparte. Las setas las saltearemos.

Asaremos el filete de Ternasco durante 5 minutos a una temperatura de 200ºC.
Presentaremos el plato cortando las Costillas e intercalando los sesos entre cada trozo.
Como guarnición pondremos las setas.
